Times House B&B, Jim ThorpeNovember is a month when we more consciously turn our thoughts to appreciation –  from thanking the men and women who have served our country on Veterans Day to thanking God for our blessings on Thanksgiving Day.

Chris and I would like to take the time this November to give thanks for all of the encouragement and support we’ve received from our family, friends, and other Jim Thorpe business owners as we celebrate the Times House B&B’s fifth year here on historic Race Street.

Most of all we’d like to thank our guests, who have allowed us to play a part in their celebrations, vacations and getaways here in the Switzerland of America. We are humbled by their generous emails, notes and reviews and will continue to work hard to make sure each visit is special for them.

Many guests have commented on how much they’ve enjoyed my apple cake, for which I must thank my dear Aunt Cass, whose birthday her family celebrated on Friday for the first time without her. In honor of our family’s Martha Stewart before we knew who Martha Stewart was, I’d like to share Aunt Cass’ recipe.

Aunt Cass Apple CakeApple Cake
4-5 apples
1/3 cup sugar
2 tbs. cinnamon
1 3/4 cups sugar
1 cup oil
4 eggs
3 cups flour
3 tsp. baking powder
2 1/2 tsp. vanilla
1/2 cup orange juice

Peel and cut 4 to 5 apples, add 1/3 cup sugar and 2 tablespoons cinnamon. Mix together in bowl. Blend together the remaining ingredients with electric mixer.

Layer 1/2  batter, 1/2 apple mixture and repeat. Aunt Cass’ recipe calls for a tube pan but I use a mini-loaf pan – just the right size to share for breakfast. :)

Bake at 350 degrees or 375 degrees for about an hour to one hour-fifteen minutes until golden and toothpick comes out clean. Enjoy!!
